Last week was a busy one, with lots of holiday parties and events, and the menu plan went quite well. It is so helpful to know what we'll be having for dinner before 5:00 each night!
This weekend's produce basket from the Bountiful Baskets Food Co-op contained bananas, pineapple, apples, pears, red grapes, avocados, romaine lettuce, asparagus, cucumbers, tomatoes, green peppers, and butternut squash. I also received an "add-on" of pomegranates and one of tortillas. We've got some great items around which to plan meals this week (and beyond) - and I'm especially excited about the asparagus. (By the way, I shared some of the bananas, grapes, green peppers, and tortillas with my college daughter - who came with me to pick up the basket for the first time - and I hope she enjoys them.)
We do have two special events this week. Tonight my sister Elicia is getting married. I'm so excited for her and my soon-to-be new brother-in-law! We'll be enjoying a dinner together following the ceremony. On Saturday night, we have highly coveted tickets to the Mormon Tabernacle Choir Christmas Concert. We're planning to have dinner at a nearby restaurant prior to the concert, maybe Blue Lemon, or else The Garden.
Here is this week's meal plan:
- Monday - Wedding Dinner
- Tuesday - Garden Vegetable Pasta (with asparagus, broccoli, mushrooms, and carrots), Herb and Garlic Rolls
- Wednesday - Ramen Noodles (with carrots, green peppers, radishes, avocados, tomatoes, olives, bacon, and cheese), Red Grapes
- Thursday - Potato Enchiladas
- Friday - Fend-for-Yourself Friday
- Saturday - Dinner Out
- Sunday - Potato Cheese Soup, Fruit Salsa with Cinnamon Crisps
