What's for Dinner, Mom?

As part of my focus on Order in 2011, I'm trying to get actively back into menu planning. Because I started a new full-time work situation last week, having dinner planned before I get home each night is particularly vital to the effective functioning of my family and to my sanity. Here is this week's plan:

  • Monday - Clam Chowder, Green Salad with Apples, Craisins, and Cashews, Breadsticks

  • Tuesday - Choose-Your-Own Frozen Dinners

  • Wednesday - Parmesan Chicken, Spaghetti, Roasted Vegetables

  • Thursday - Campbell's Steak & Potato Soup, Biscuits

  • Friday - Fend-for-Yourself Friday

  • Saturday - Leftover Buffet (Say it with a French accent. It sounds better!)

  • Sunday - Boneless BBQ Ribs (in Crockpot), Funeral Potatoes, Marshmallow Fruit Salad

Today is a holiday at my office, so I'm able to prepare the breadsticks, using my sister Elicia's recipe:

YUMMY BREADSTICKS
    Set out about 24 frozen rolls on a cookie sheet, and thaw them for just a couple hours, so they aren't frozen anymore but they are still cold. Pull each roll so it is about 6 inches long. Melt a stick of butter and pour it over the rolls, and roll them in the butter so they are coated. Then sprinkle generously with Salad Supreme. Cover the cookie sheet in plastic wrap, and let rise until they double in size, a couple more hours. Bake at 350° for 15-20 minutes or until golden brown.

I should be home-to-stay by late afternoon on Wednesday, so that day's dinner menu is more involved than the menus for Tuesday and Thursday, when I've got other commitments after a full day of work.

If I'm not too exhausted on Saturday, I'm hoping to supplement our leftover buffet with some homemade brownies or cookies that I'd planned on making during the holidays but didn't find the time.

Sunday's menu requires somewhat more work than I usually like to do on Sunday after church, but I'm hoping that everyone will help with dinner prep. Sugar Plum has made funeral potatoes before, and Sugar Bear has been asking to make a fruit salad since before Christmas. I'll get up a little bit early and get the ribs in the Crockpot before we go. It should work out well.

Um... would it be horrible for me to come home for dinner on Sunday? That's, like, the best foods ever. Except I couldn't get there until 5ish. :/
